Quinoa bread for sandwich

Ingredients:

  • 1 pound Quinoa flour
  • ½ pound Cassava (Yucca) flour
  • 1 ½ pound white flour
  • 2 cups buttermilk
  • 1 cup Quinoa water
  • ¾ pound light butter
  • 4 tablespoons sugar
  • 4 tablespoons olive oil
  • 4 tablespoons baking powder
  • ½ tablespoon bicarbonate
  • 1 tablespoon salt
  • 2 eggs

Directions:

Sieve all the flours and mixed them with the rest of the ingredients, the butter, the warm olive oil, and the beaten eggs. All is mixed until a compact paste is formed, knead it into not so thin sheets and then cut it in the desire size. Pinch it with a fork, put it into greased and floured cans, and bake it at a regular temperature.

Quinoa and Plums cocktail

Ingredients:

  • 6 cups Quinoa water
  • 1 Kg fresh plums
  • ½ pound sugar
  • 1 ½ bottles singani or pisco
  • 1 pinch plums essence
  • Ice cubes

Directions:

Boil the Quinoa water for 20 minutes with the plums pinched and the sugar. Let it cool down and then add the sigani and the plums essence, mix it well and serve with ice cubes.

Quinoa with fruit rinds refreshment

Ingredients:

  • 1 ½ pound Quinoa grain
  • 4 pounds sugar
  • 2 rinds Orange
  • 1 rinds Pineapple
  • 8 cloves
  • 1 tablespoon Anise
  • 4 rinds Tangerine
  • 8 jars Water
  • 10 branches Cinnamon

Directions:

In an adequate bowl, boil the water with all the rinds, fresh or dry, plus the cloves, cinnamon, and anise. After half hour of boiling add the Quinoa and wait until is totally cooked. Let the mix cool down, filter, and serve. Add sugar to taste while serving.

Quinoa and cheese bites (Entry)

Ingredients:

  • 4 tablespoons Quinoa flour
  • 4 tablespoons Cassava (Yucca) flour
  • 5 tablespoons white flour
  • 8 tablespoons buttermilk
  • 1 tablespoon butter
  • ½ tablespoon baking powder
  • 1/8 teaspoon bicarbonate
  • ½ teaspoon Orange rind powder
  • 1 teaspoon salt
  • 1/8 pound cheese
  • ¼ liter oil
  • 2 eggs

Directions:

In a bowl, sieve the white and Quinoa flours and add the baking powder, Cassava (Yucca) flour, orange and salt. Apart, beat an egg add the flours with milk, two tablespoons of oil, and the grated cheese. Mix all with a wooden spoon until a soft paste is formed and let it cool 10 minutes. Then knead in thin sheets cutting in round pieces.

Quinoa creole lunch

Ingredients:

  • 1 pound Quinoa grain
  • ½ Kg Beef
  • ½ Kg Mutton (Lamb meat)
  • 4 onions
  • 1 Locoto (Bolivian pepper)
  • 2 Carrots
  • ½ teaspoon cumin
  • ¼ teaspoon pepper
  • 1 teaspoon oregano
  • 20 pea pods
  • 2 yellow pepper pods
  • 3 tablespoon oil
  • 1 clove of garlic
  • 20 potatoes
  • 20 parsley branches
  • Salt to taste

Directions:

Clean the meat and cut it into pieces, put them in a pot with 15 cups of water. After 15 minutes of boiling, add the Quinoa (previously washed), with a stalk of green onion; clean and cut the onions, locoto, tomato, and cloves of garlic, fry them with the seasonings (previously cleaned and minced), and add all to the boiling mix. Clean the carrots, cut one in pieces and grate the other, add them to the mix with the parsley cut and the pea pods. Once the Quinoa is completely cooked, add the potatoes cut in slices and the fried yellow pepper pods. After all is cooked, remove the green onion, add salt and oregano to taste, remove everything from the stove, and let it cool for some minutes. Decorate with parsley when served.

Quinoa and fruits dessert

Ingredients:

  • 1 ½ cups Quinoa cream
  • 2 cups diluted dense milk
  • ½ pound sugar
  • 5 bananas
  • 2 oranges
  • 1 custard apple
  • 1 lemon
  • ¼ teaspoon vanilla>

Directions:

Clean the fruits and grate them. Beat the milk with the sugar until the mix is creamy while adding the lemon juice; then, mix all the preparations with the Quinoa cream and serve in dessert dishes.
